
We love waffles around here, especially for a weekend brunch! I usually make these on Sundays and get the kids involve in prepping the batter, it makes for a nice little family activity. We always come up with different ingredients to include to give different flavors to our waffles, like cinnamon, chocolate chips or shredded coconuts. Yesterday while I did a pit stop at the market to pick up some eggs I saw the eggnog next to the milk and taught what a good and festive idea to add to our Sunday waffles! It was a great idea indeed. Try a batch this week or on Christmas morning for a fun and festive side to your Christmas brunch.
Makes 5 large waffles
Ingredients:
- 2 cups all-purpose flour
- 1 tbs granulated sugar
- 4 tsp baking powder
- 1/4 tsp. nutmeg
- pinch of cloves
- pinch salt
- 1 3/4 cup Eggnog
- 2 eggs
- 1/4 cup unsalted butter, melted
- 3 tsp vanilla extract

Begin by heating up your waffle iron and greasing it if you need to.
- In a large bowl, whisk flour, sugar, baking powder nutmeg, clove, and salt.
- Make a well in the center, and pour the eggnog, eggs, melted butter and vanilla.
- Mix until everything is fully combined without over-mixing. Let the batter rest for two minutes.
- Every waffle iron is different but with my waffle iron, I use about 3/4 cup of batter per waffle to get a perfect, full waffle. (you can shop my waffle maker below)
- Place waffles on a wire rack in a single layer and repeat this process with the remaining batter. Serve Immediately
