LIME & MANDARINE BUNDT CAKE

LIME & MANDARINE BUNDT CAKE

Last week I received a fresh delivery including 2 new body wash fragrances from Le Petit Marseillais, (that both smell oh-so-amazing!) along with a beautiful wooden crate filled with juicy limes and mandarines! I’ve been wanting to do a citrus cake for a while and this was the perfect opportunity to come up with a healthier version of a lime cake drizzled with a mandarine glaze. After a few trials, a finally perfected this light, moist and citrusy treat that is really easy to whip up and pretty healthy for a cake recipe.  A perfect dessert for the whole family to enjoy or to impress your guests next time you are hosting! I will definitely have this on the table for Easter brunch this year!

Heart Shape pancakes for my valentines

Heart Shape pancakes for my valentines

On valentines day I always like to prepare something special for my boys and it often gravitates around brunch or breakfast. I love to make this day ultra special without being complicated. For me it’s all about creating memories, spending quality time together and having a little fun. I set up the table with little touches that are personalized and create an easy peasy menu that the boys will love. In our household, we can’t go wrong with pancakes, even better when served in a heart shape with little candies as a topping. This year Valentine’s day falls on a weekday but we can definitely make it special by setting up the table the night before (when the kiddos are in bed), placing little goodies on their chair and prepping my go-to pancake batter, in advance. With a bit of preparation, Valentine’s day will be as memorable this year, as if it would fall on a restful Sunday! Happy Valentine’s day everyone! -xo-

Savoy Cabbage & fennel soup

Savoy Cabbage & fennel soup

Soup is often on my weekly meal menu. They’re comforting to make and comforting to eat and I can pack/hide tons of vegetables in them, an overall win-win in my book. This particular one has been on rotation for a few weeks and it’s finally perfect in my opinion. I love the mix of flavors and textures that the cabbage, fennel, and thyme bring to this recipe. A family favorite that takes almost no time to prep and is packed with flavors and healthy ingredients.
