CHOCOLATE AVOCADO PUDDING

CHOCOLATE AVOCADO PUDDING

IMG_4710This vegan chocolate pudding made with avocados couldn’t be easier to prepare! Just five ingredients, ready in five minutes… And NO you CAN’t taste the avocado (don’t even tell anyone before they eat it, to see their reaction afterward…priceless!) I promise this avocado chocolate pudding is not as weird as it sounds. It actually taste like heaven. So chocolaty, so creamy, so REAL. All made with ingredients packed with superfood qualities.

INGREDIENTS

  • 2 ripe avocados, pits removed
  • 4 tablespoons cacao powder
  • 1/2 cup unsweeten almond milk
  • 4 tablespoons pure maple syrup
  • 1 teaspoon vanilla

INSTRUCTIONS

  1. Add all of your ingredients in a blender or a food processor and blend until smooth, scraping down the sides in between. Add more almond milk if needed to help blend.
  2. Taste test it to see if you prefer more chocolate flavor (add more cacao powder, 1 tablespoon at a time) and more sweetness (add a splash of maple syrup). Blend until smooth.
  3. Transfer to an airtight container for storing. Refrigerate for up to 4 days. Serve chilled with your favorite toppings (pictured here with quinoa puffs). ENJOY!

Chia Strawberry Jam

Chia Strawberry Jam

Its Strawberry season and I can’t seem to get enough of these beautiful red fruits and turning them into jam! After making your first batch of homemade Chia Strawberry Jam, I promise you’ll never buy store bought again. It’s surprisingly easy and the flavor simply doesn’t compare. This Easy Chia Seed Strawberry Jam is the perfect healthy alternative. It’s made with only 4 ingredients, no refined sugar, no gelatin, no pectin. The chia seeds create a jam-like texture, the maple syrup brings just enough sweetness and it’s quick and easy to make. Enjoy!

LIME & MANDARINE BUNDT CAKE

LIME & MANDARINE BUNDT CAKE

Last week I received a fresh delivery including 2 new body wash fragrances from Le Petit Marseillais, (that both smell oh-so-amazing!) along with a beautiful wooden crate filled with juicy limes and mandarines! I’ve been wanting to do a citrus cake for a while and this was the perfect opportunity to come up with a healthier version of a lime cake drizzled with a mandarine glaze. After a few trials, a finally perfected this light, moist and citrusy treat that is really easy to whip up and pretty healthy for a cake recipe.  A perfect dessert for the whole family to enjoy or to impress your guests next time you are hosting! I will definitely have this on the table for Easter brunch this year!
